Single Serve Chocolate Chip Cookie

Single Chocolate Chip Cookie

Have you ever made a batch of chocolate chip cookies because you just wanted one cookie!? How did that work out for you,did you really eat only one?

If you are like me, you don’t just eat one, you eat half the batch!

Well, the next time that chocolate chip craving hits, you can make just one chocolate chip cookie with today’s recipe.

This recipe is perfect for that late night or any time craving when. you just need a warm chocolate chip cookie fresh out of the oven!!

Tips for Making An Individual Chocolate Chip Cookie.

Measure ingredients precisely. If you add in too much or too little of something it will effect the texture of your cookie much more so than in a regular full batch.

Mix by hand. Because the volume of ingredients is so much less, It is easier and quicker to mix by hand than using a mixer

Use softened butter. To make incorporating the sugar easier, I use the back of my spoon so smash and soften the butter before adding in the sugar.

Egg Yolk. In this recipe we only use the egg yolk. Using the entire egg makes the cookie taste too eggy. Save the egg white to throw into your scrambled eggs or an omelet.

Chocolate Chips. You can use any flavor of chips you like. My favorite combo is semi sweet and white chocolate chips together.

How to Make One Chocolate Chip Cookie

  • Combine sugars into softened butter and stir to combine.
  • Add in egg yolk and vanilla.

  • Add in dry ingredients and chocolate chips and stir just until combined. Don’t overmix.

  • Form cookie dough into a disc and slighlty flatten it.
  • Place on a parchment lined baking sheet.
  • Add a few extra chocolate chips into the top of the dough for a prettier cookie.

  • Bake at 350 degrees F. for 12-15 minutes until lightly browned around the edges. I prefer the cookie slightly underbaked in the middle.

I think the texture of this cookie is perfect, it’s slightly crispy on the edges and nice and chewy in the middle. And, there is just enough for me! Actually the cookie is a good size so if you are feeling generous, you could break it in two and share.

Ingredients

  • 1 1/2 Tbsp butter softened
  • 2 1/2 Tbsp brown sugar
  • 2 Tbsp granulated sugar
  • 1 egg yolk
  • 1/2 tsp vanilla
  • 1/4 cup all purpose flour plus 1 Tbsp flour
  • 1/8 tsp baking powder
  • 1/8 tsp baking soda
  • 1/8 tsp salt
  • 1/4 cup chocolate chips

Instructions

  • Preheat oven to 350 degrees F
  • Mix together butter and sugars.
  • Add in egg yolk and vanilla and stir to combine.
  • Add in dry ingredients and chocolate chips.
  • Stir just until combined.
  • Form into a ball and slightly flatten.
  • Place on a parchment lined baking sheet.
  • Bake for 12 – 15 minutes.

    I have made this a number of times. Sometimes I bake it in my toaster oven with the convection on, somtimes not. I made it today in the regular oven and it didn’t turn out. Bottoms were darker and it tasted like I needed salt. I forgot to add the little bowl that had the baking soda, salt, and baking powder. Whoops!!!

    Really thank you for this recipe. It is so easy to make and the ratios are just right. I don’t have to add or tweak anything.
