This Lucky Leprechaun Bark is the perfect way to catch a Leprechaun! Made with chocolate, pretzels, cookies and candy this bark is as much fun as it is to eat and the kids will love it.
Why You’ll Love This!
This Leprechaun cookie bark is a fun and easy way to create a treat for your St Patrick’s Day celebration. I’m not a huge fan of turning all my food green for St. Patrick’s Day so this is a way to celebrate with out using green food coloring!
It only takes a few minutes to make and it is a perfect treat to share.
Leprechaun Bark Ingredients
Chocolate. I use candy melts but you can also use Almond Bark or white chocolate chips. The candy melts and bark melt more smoothly. If you prefer chocolate bark you could also use dark chocolate chips or chocolate melts. Green candy melts would also be fun.
Cookies. I used chocolate Oreos but you could use a mint Oreo.
Candy. Skittles are rainbow colored which is perfect but you could also use green M & M’s or mint m&Ms. The little rainbow sour candy is a fun addition. You could also use Lucky Charm marshmallows.
Sprinkles. The little Shamrock sprinkles were a fun addition. Rainbow sprinkles would also be fun.
How to Make Leprechaun Bark
- Place broken cookies and pretzels on a parchment lined baking sheet
- Melt the chocolate or candy melts in the microwave.
- Pour melted chocolate over the top.
- Spread the chocolate with a spatula to make sure everything gets covered with chocolate.
- Sprinkle. While the chocolate is warm, sprinkle with rainbow candy and sprinkles. Allow chocolate to set up. You can speed up the process by placing it in the refrigerator.
- After the bark has hardened, use a knife to cut the bark into pieces or break by hand.

Just wanted to let you know I made a version of this for my neighbor/teacher treats this year. I had to work with the ingredients I could find, but it still worked out beautifully! Thanks for sharing.
Also, it’s my turn to host book club next week so I’m off to read up on some of your other bar/dessert recipes. 🙂
P.S. I too saw Easter corn at Fred Meyer. And if ever you’d like a specific color M&M, JoAnn’s carries a full range of colors in their baking/wedding favor section.

Thanks for another great post – and another yummy seasonal bark idea! I have a friend whose daughter’s birthday is the 17th, and she always has a st. Paddy’s theme. This would be perfect! I can’t wait to tell her!

Darn it, I knew you would come up with something. I guess instead of selling my last two boxes of Thin Mints I will be putting them to better (yummier) use! I was thinking of using the mint green m & ms or even Andes Mints too. Thanks for another great candy bark recipe. I also saw the Easter/Spring candy corns at Michael’s. I cannot walk by candy corn anymore without thinking of you!

This is so cute! I love dying things green on St. patricks day – usually whipped cream & mashed potatoes. 🙂 Oh – green food dye in the water before cooking rice makes VERY GREEN rice. LOL
