Today’s cookie recipe is one I have had for years. These cookies are rich and delicious. A chocolate cookie, topped with a marshmallow, and frosted in a chocolate buttercream frosting.
Ingredients
- Flour
- Sugar, granulated and powdered sugar
- Cocoa
- Evaporated Milk
- Butter
- Milk
- Shortening
- Oil
- Water
- Egg
- Vanilla Extract
- Baking Soda
- Salt
- Marshmallows
How To Make Chocolate Mountain Cookies
- Beat well shortening, milk, water, egg and vanilla
- Add remaining ingredients except marshmallows, blend well
- Drop by teaspoonful on greased cookie sheet
- Bake 350 degrees for 8 minutes
- Quickly place marshmallow half (sticky side down) on each cookie
- Let cool
Frosting
- Combine frosting ingredients and beat until smooth
- Frost marshmallows with chocolate buttercream to make look like a mountain.

Chocolate Mountain Cookies
A chocolate cookie topped with a marshmallow and frosted with chocolate frosting to make a mountain shaped cookie.

Ingredients
- 1/2 C shortening
- 1/2 C evaporated milk
- 2 Tbsp water
- 1 egg
- 1 tsp vanilla
- 2 C flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup sugar
- 1/2 C cocoa
- 1/2 C chopped walnuts optional (I didn’t put them in)
- 24 large marshmallows cut in half
Frosting:
- 1/3 C soft butter
- 2 C powdered sugar
- 1 1/2 tsp vanilla
- About 2 Tbsp milk
- 6 Tbsp cocoa
- 2 Tbsp oil
Instructions
- Beat well shortening, milk, water, egg and vanilla
- Add remaining ingredients except marshmallows, blend well
- Drop by teaspoonful on greased cookie sheet
- Bake 350 degrees for 8 minutes

Hi Leigh Anne, thank you for great looking (and I am sure tasting) cookie! I do not know what you mean by shortening, as I am a purist and use butter mostly.

Crisco is a name brand of shortening. Feel free to substitute butter though if you prefer.

I just made these for a work function and I added a Sno-Cap to the top to enhance the moutain-look. they were a total hit! I’m going to use the basic chocolate drop cookie recipe and try a bunch of different things in it besides marshamallow. First on the list…Rolos!

Any ideas on how to store these? I am frosting them as I type, and wondering if they weill get too hard…but they’re still to “wet” to layer… any tips? Thanks!
