Cranberry and Cilantro Quinoa Salad

Ingredients

  • 1 1/2 C chicken broth
  • 1 C uncooked quinoa rinsed
  • 1/4 C red bell pepper chopped
  • 1/4 C yellow bell pepper chopped
  • 1/3 C red onion finely chopped
  • 1 tsp curry powder
  • 1/2 tsp cumin
  • 1 tsp sugar
  • 1/4 C chopped fresh cilantro
  • 2 limes juiced
  • 1/3 C toasted sliced almonds
  • 1/2 C shredded carrots chopped fine
  • 1/2 C dried cranberries
  • 2-3 green onions chopped
  • salt and pepper to taste

Instructions

  • Pour chicken broth into pan and bring to boil. Add quinoa, cover, reduce heat and simmer for 15-20 minutes or until liquid is absorbed. Fluff with fork and chill.
  • Add chilled quinoa into a bowl and add in remaining ingredients.
  • Salt and pepper to taste.
  • Chill before serving.
