Slow Cooker Chipotle Copycat Barbacoa Beef

Fall is here and I’m breaking out the slow cooker! There is nothing better than arriving home on a cool, rainy afternoon and smelling dinner cooking away in the slow cooker.   I love that smell anytime of year but especially in the fall.  Makes me all warm and cozy. Today’s recipe is a copycat recipe for one of my favorite fast food places – Chipotle. I am not much of a fast food kind of girl  but when I am running around and need lunch now, Chipotle will always [Continue Reading…]

Slow Cooker Chicken Tinga

Slow Cooker Chicken Tinga

Today I’ve got another yummy slow cooker meal for you.  Bless my slow cooker.  My only regret about my slow cooker is that I didn’t use it more when my kids were young.  What was I thinking?  It really is a mom’s best friend when it comes to getting a yummy, hot meal on the table at night. Today we’re playing with some fun flavors.  This is a Mexican inspired dish and uses chipotle chile peppers in adobe sauce and cumin for lots of great flavor.  I love the smoky [Continue Reading…]

Slow Cooker Corned Beef

I know a lot of people have a green dinner to celebrate St. Patrick’s Day.  I like green food but I don’t like food that is green that is not suppose to be green (i.e., eggs, potatoes, pancakes etc.)  So instead of celebrating with a “green dinner” I’d rather celebrate with a little more traditional cuisine.  Corned Beef seems to be a favorite choice.  Now I have been to Ireland and must admit I never was served or ate corned beef while I was there. I’m thinking we here in [Continue Reading…]

Slow Cooker Pork Chili Verde

Slow Cooker Chile Verde

Because until a few months ago all of our children were living in Utah we have made a lot of trips to Utah over the last 10-12 years.  To Provo, Utah specifically.  One of our favorite activities to do while there is go out to eat.  For years our favorite place to go was Los Hermanos.  A local Mexican restaurant that is also a local favorite.  There is always a line and a wait at Los Hermanos. Now that Provo’s restaurant scene has grown and improved we don’t go to [Continue Reading…]

Slow Cooker Greek Pork

Slow Cooker Greek Pork with Yogurt Sauce

It may or may not surprise you to know that for the majority of my life I have been a  “plain jane”  when it comes to eating.  I like cheese pizza, vanilla ice cream and ketchup only on my hamburger.  Since I entered the food blogging world though I have learned to expand my flavor palate.  I’ve had some fun lately branching out of my seasoning/flavor comfort zone and experimenting with some more international flavors. (At least more than Mexican and Italian!!)  I am a total Thai fan now with  [Continue Reading…]

Slow Cooker French Dip Sandwich

Slow Cooker French Dip Sandwiches

Ever since I was young my favorite hot sandwich has been a french dip.  As a kid I thought dipping my sandwich into that rich au jus as so fun!  I still do! Yum.  Today’s version is made in the slow cooker and the rosemary and thyme seasoning give it a nice rich flavor. The best part is – it’s easy.  I made this on Sunday.  Put it in the crock pot in the morning and by the time we were home from church (4:00)  it was ready to eat. [Continue Reading…]

Slow Cooker Parmesan Honey Pork Roast

Slow Cooker Parmesan Honey Pork Loin Roast

I’ve got another yummy slow cooker recipe for you today.  I love using my slow cooker any day of the week but my favorite day to use my slow cooker is on Sunday.  We go to church for three hours on Sunday so I love to put something in the slow cooker first thing in the morning and then when we get home and are ready to eat about 3:00 p.m.  dinner or linner (lunch and dinner) is ready!  Sunday is suppose to be a day of rest and using [Continue Reading…]
