Mint Brownies have a delicious layer of mint cream sandwiched between the chocolate brownie and the chocolate icing.
One of my favorite things to do when I visit my college alma mater is to buy BYU Mint Brownies in The Wilkinson Center. These mint chocolate brownies are delicious and a favorite of almost everyone that steps foot on campus. Mint Brownies are a chocolatey, chewy brownie with a layer of mint green frosting covered by another layer of chocolate frosting! If you love mint and chocolate, this is the perfect recipe for you.
Ingredients
- butter
- cocoa
- honey
- eggs
- sugar
- flour
- baking powder
- salt
- milk
- light corn syrup
- powdered sugar
- mint extract
- green food coloring, optional
How to Make Mint Brownies
Start by making the brownies.
- Melt butter and mix in cocoa, allow to cool
- Mix honey, eggs, sugar, flour, baking powder and salt into the butter and cocoa mixture.
- Pour batter into a greased 9 x 13 pan
- Bake at 350 degrees for 25 minutes
While the brownies cool, make the mint layer.
- Add salt, corn syrup and powdered sugar to softened butter and beat until smooth and fluffy.
- Add mint extract and green food coloring and mix well
- Add milk gradually until the consistency is a little thinner than cake frosting
- Spread mint icing over brownies
Place in the freezer to allow the frosting to harden. While the brownies are in the freezer you can make the final layer, chocolate frosting.
- Add salt, corn syrup and powdered sugar to softened butter and beat until smooth and fluffy.
- Add cocoa and mix until smooth
- Add milk gradually until the consistency is a little thinner than cake frosting
- Spread chocolate icing over mint icing
Mint Chocolate Brownies

Brownies
- 1 C butter
- 1/2 C cocoa
- 2 Tbsp honey
- 4 eggs
- 2 C sugar
- 1 3/4 C flour
- 1/2 Tsp baking powder
- 1/2 tsp salt
- 1 C chopped walnuts I left these out
Mint Icing
- 5 Tbsp butter
- dash of salt
- 3 Tbsp milk
- 1 Tbsp light corn syrup
- 2 1/3 C powdered sugar
- 1/2 tsp. mint extract
- 1-2 drops green food coloring
Chocolate Icing
- 5 Tbsp butter
- dash of salt
- 3 Tbsp milk
- 1 Tbsp light corn syrup
- 2 1/3 C powdered sugar
- 1/3 C cocoa
Instructions
Brownies
- Melt butter and mix in cocoa
- Allow to cool
- Add honey, eggs, sugar, flour, baking powder and salt
- Mix well
- Add nuts
- Pour batter into a greased 9 x 13 pan
- Bake at 350 degrees for 25 minutes
- Cool
Mint Icing
- Soften butter
- Add salt, corn syrup and powdered sugar
- Beat until smooth and fluffy
- Add mint extract and green food coloring
- Mix
- Add milk gradually until the consistency is a little thinner than cake frosting
- Spread mint icing over brownies
- Place brownies in the freezer for a short time to stiffen the icing
Chocolate Icing
- Soften butter
- Add salt, corn syrup and powdered sugar
- Beat until smooth and fluffy
- Add cocoa
- Mix until smooth
- Add milk gradually until the consistency is a little thinner than cake frosting
- Spread chocolate icing over mint icing

Is it supposed to say 1/2 tsp of baking powder instead of 1/2 Tbsp? I’ve made these before, but this batch is bubbling up like crazy!
