Fresh Strawberry Ice Cream

This has turned into sweet week on the blog!  I usually don’t do so many sweets all in a row but I got started and I just couldn’t stop.  Today I’ve got one more for you and I promise next week I’ll be back with a week full of savory – how’s that?

As I’ve mentioned a time or two this week, we’ve got a few strawberries at our house.  The Strawberry Pizza I shared earlier is definitely an old family favorite and Strawberry Sour Cream Cake is becoming a new family favorite. Today’s recipe is also another old  family favorite and it is one that my mother use to make.  This recipe  for strawberry ice cream came from an old family friend and is amazing.

Nothing says summer better than a batch of homemade ice cream – especially when it is full of strawberries.

Fresh Strawberry Ice Cream

The fresher the strawberries the better of course but this ice cream is also delicious with frozen berries but when you can use fresh – do!

Fresh Strawberry Ice Cream

The recipe uses a combination of whole milk and whipping cream along with some sugar of course and fresh strawberries.  You can mash up your strawberries as much as you like.  If you like big chunks of strawberry in your ice cream just smash them a bit but you can puree them too.  I usually go for right in the middle.

This recipe is also delicious made with other kinds of berries – raspberries, blackberries, marionberries, blueberries and a combination of berries would be great too – get creative!

I use a 2 qt. Cuisinart counter  top ice cream maker.

Fresh Strawberry Ice Cream

Prep Time: 10 minutes

Yield: 2 quarts

Ingredients

  • 4 C strawberries, mashed
  • 3 eggs
  • 1 1/2 C sugar
  • 1/2 tsp salt
  • 2 tsp vanilla
  • 2 Tbsp lemon juice
  • 2 C Whipping cream
  • 2 C whole milk

Instructions

  • Mash berries as desired
  • Mix all ingredients together
  • Pour into ice cream maker.
  • Process according to manufacturer's directions
  • Enjoy!

      Ginny, I don’t but if you aren’t comfortable with that you could totally cook it first.

        Do you think that’s why the lemon juice is in there, to cook the eggs?

          No the lemon juice is for flavor – if you are worried about eating the raw eggs you will need to add them to some of the milk and bring them to a simmer and then cool the mixture before adding to the ice cream mixer.
