Enchilada Casserole

Enchilada has the same great taste and flavor of regular enchiladas but so much easier to put together.

Enchilada Casserole makes dinner planning so easy. All the taste and flavor of regular enchiladas with less work! School doesn’t start here in Portland until after Labor Day but I’ve seen lots of photos on Facebook and Instagram of the first day of school from other parts of the country already.  This will be the first year in over 25 years that we haven’t had anyone going to school.  Unless you count our daughter who is a school teacher and she already had her first day of school last week [Continue Reading…]

We are in major count down mode at our house.  We’re not counting down the days until Christmas but rather counting down the days until the kids arrive home!!  The first one arrives home tomorrow and by Saturday evening they will all be home.  I’m just a little excited. One of my goals is to have as much Christmas prep and blog work down before they get home as I can so that I can really enjoy my time with them and have as few distractions as possible.  So that [Continue Reading…]

The first step is to use the chicken from your rotisserie chicken and combine [Continue Reading…]

Beef Enchiladas

I think my favorite ethnic food group is Mexican.  It is usually my food of choice when I get to pick where we go out to eat. One of my favorite food memories growing up are the yummy cheese enchiladas my mom made. When I was in college I would save up my food money and treat myself to a cheese enchilada in the BYU Cougareat once a week! And still, when we go out for Mexican food, my choice is always the same – cheese enchiladas! I am not [Continue Reading…]
