Cook quinoa by combining two cups of water to one cup of quinoa. Bring to a boil, add lid and turn down to low and simmer and cook for 15 minutes until the water is absorbed and quinoa is fluffy. Fluff with a fork
Top with cooked cooled quinoa
Add vegetables
Add dressing and toss to coat
Top with feta cheese

Notes
If you use lettuce in the salad it will only last a day if dressing has been added to it. If you need the salad to last longer don't add in the romaine lettuce until ready to serve or leave it out all together. Without the lettuce it will keep in the refrigerator for up to 3 days.I recommend you dress the salad with my homemade Greek salad dressing.
