Ingredients

cups
cherry tomatoes
cut in half
1/2
cup
sweet onion
sliced
1/4
cup
brown sugar
packed
1/4
cup
granulated sugar
1/2
tsp
dried thyme

olive oil
Instructions
Heat olive oil in pan over medium heat
Add onions and saute until the onions are soft.
Add in tomatoes, sugar and thyme
Stir and simmer until thickened
Smash the tomatoes with the back of a spoon if needed.
Notes
Tomato Relish is delicious on top of hamburgers, hot dogs or as a condiment with with beef, chicken or fish. Use it instead of ketchup or salsa.
Add a spoonful of tomato salsa in with your eggs for a delicious breakfast.
To add a little heat to this relish, add in some red pepper flakes or some chopped jalapenos
Use as a dipping sauce or dip with crackers and cheeses. It's also great for dipping chicken nuggets
