Instructions
Place peeled and cube potatoes into Instant Pot
Add in 1 1/2 cups of water and 1 tsp salt.
Place lid on Instant Pot and turn valve to seal.
Cook on manual high pressure for 10-12 minutes. Use a quick release.
Drain water from potatoes. Mash by hand with a potato masher or use a hand mixer.
Add remaining salt, pepper and garlic power if desired.
Add additional butter and chives to top for garnish.
Notes
To Peel or Not to Peel. We usually peel our potatoes, but you can leave the skin on if you are using red or Yukon gold. It gives the potatoes some fun color and texture.
Warm Milk. Use warm milk when making mashed potatoes. It makes the potatoes creamier. I prefer whole milk, half and half, or whipping cream. You can also use buttermilk or sour cream instead.
Add Herbs for Extra Flavor. Add some fresh herbs or dried herbs such as rosemary or thyme.
Dairy-free mashed potatoes. To make them dairy free, substitute the milk with your preferred dairy-free milk (almond milk, oat milk, etc.) You can also substitute dairy-free butter for regular butter, or leave it out altogether.
Cheese Potatoes. Add in some shredded or grated Parmesan Cheese or Cheddar Cheese to taste.
Garlic Potatoes. To make garlic potatoes add in some roasted garlic to taste.
