Oatmeal Chocolate Bars
Chocolate Oatmeal Bars are chewy on the bottom, a thick fudgy middle and crispy on top. Full of yummy flavor and great texture.

Ingredients
Crust
3/4

all purpose flour

quick cooking oats

brown sugar

Filling

all purpose flour

semi sweet chocolate chips

Instructions
For Crust
Combine butter, flour, oatmeal, sugar, baking powder, baking soda and salt.
Remove 1 1/4 cup of mixture and set aside.
Press remaining mixture into the bottom of a 9 x 9 baking pan lined with parchment paper or sprayed with nonstick spray.
Bake this layer at 325 degrees F for 8 minutes. Cool completely.
For Filling:
Melt chocolate and butter in a bowl. Add in eggs.
Combine flour, sugar and salt in a bowl and pour this into chocolate mixture.
After crust has cooled, pour filling mixture over the top.
Sprinkle with reserved oatmeal mixture and bake at 325 F for 35-40 minutes.
Cool the bars to room temperature or at least one hour.
After they have cooled cut into squares and enjoy. I love mine with a glass of cold milk!
