Slice sweet potatoes into evenly sized fries, about 1/4 - 1/2 inch thick. Make them as uniform as possible so they bake evenly.
Add fries to egg white and stir to coat.
Drizzle fries with olive oil.
Add in salt, pepper and garlic powder and toss to coat.
Place fries in a single layer onto a parchment lined baking sheet. Be sure the fries don't touch. If they are too close, they will steam and not get crispy.
Bake for 20 minutes. Remove from oven and turn fries over. Be sure to keep them in a single layer. Return to oven bake for an additional 10-14 minutes.
They will form brown spots on the outside. They will be crisp on the outside and tender and soft on the inside.
Remove from oven and season with some additional salt if desired.
