This fried rice is just like you would order at your favorite Chinese restaurant. you won't believe how easy it is to make delicious homemade fried rice!
4cupsricecooked and cooled or chilled. Prefer jasmine or basmati.
1cupmeat chicken, ham, pork, bacon, cooked and cut into small pieces.
2-3eggsscrambled
2cupsvegetables carrots, peas, onions, etc. chopped into small pieces Can use frozen veggies or fresh.
2-3Tbspoilvegetable or olive oil
2-3Tbspsoy saucemore to taste
1tspgarlic powder
1green onionchopped for garnish
Instructions
Saute vegetables in olive oil until soft and then added in cooked meat.
Add in cooled or chilled rice and stir until well mixed. Push rice aside in the pan or wok.
Add in scrambled eggs. Stir until egg is cooked through, break into small pieces. Mix egg into the rice/meat mixture.
Add in soy sauce to taste, stir until well mixed.
Sprinkle with a little garlic powder if desired
Notes
Use chilled rice or slightly cooled rice to make fried rice. Fried rice is a great way to use leftover rice but you can also use freshly made rice. If you are cooking the rice right before making the fried rice, spread the cooked rice out on a baking sheet in a thin layer and allow some of the moisture to evaporate before frying the rice. If your chilled rice or day old rice has formed clumps be sure and break those up before frying the rice.
Rinse your rice before cooking it to remove excess starch.
If you have a wok, use it to make your fried rice. It makes it easier and less messy to stir, turn and toss the rice while cooking it.
