Mulligatawny Soup

Ingredients

onion
chopped

celery
chopped

carrot
chopped

tsp
garlic
minced

butter

all purpose flour

tsp
yellow curry powder

chicken broth

Tbsp
garam masala
optional for extra heat

granny smith apple
cored and diced

cooked rice

skinless
boneless chicken breast, cooked and cut into cubes
salt and pepper to taste

dried thyme

heavy cream or coconut milk
Instructions
Saute onions, celery, carrots and garlic in butter in a sou pot.
Add flour and curry. Cook for 5 minutes.
Add in chicken broth and bring to a boil. Simmer for 30 minutes
Add in apple, cooked rice, salt, pepper,and thyme.
Simmer for 15-20 minutes.
When ready to serve add in warm cream or coconut milk
