Ingredients
Potato Pancake
2
cups
frozen hash brown potatoes
grated (thawed)
1/8
cup
flour
1/4
tsp
salt
1/8
tsp
pepper
1
tsp
dried minced onion
1
egg
beaten
1/8
cup
milk
1
tsp
vegetable oil
Scramble
1/3
lb.
Mild Italian Sausage
browned
5
eggs
1/2
cup
grated cheddar cheese
2
green onions
chopped
1/2
tomato
chopped
Instructions
Potato Pancake
Mix together flour, seasoning, onion, egg, milk and oil.
Add in hash browns. Stir to combine.
Add about 1 Tbsp oil to frying pan and heat.
Add in potato pancake mixture and flatten with a spatula forming a large pancake.
Allow to cook until desired crispyness on one side and then flip and cook on other side.
Scramble
Brown sausage.
Scramble eggs and add in browned sausage.
Stack eggs on top of potato pancake.
Sprinkle with grated cheese, tomato and green onion
