We've taken the traditional English dessert and turned it into a creamy and delicious ice cream treat. A vanilla ice cream base swirled with strawberries and meringue cookies.
Place 1 1/2 cups of sliced or diced strawberries in a bowl. Add in 2 Tbsp of sugar. Stir to coat. Allow to rest for 10-14 minutes.
Crush 9 of the 12 meringues in a bowl or plastic storage bag.
Mix together milks, 1 1/2 cups of sugar and vanilla extract.
Pour mixture into ice cream maker and process according to manufacturers directions.
After ice cream is processed it will be a soft serve consistency.
Add in half the strawberries, draining the juice and half the meringue cookies. Swirl through the ice cream.
Place into an insulated ice cream container. Add remaining strawberries and meringue cookies on top. Use a knife to gently swirl into the ice cream or leave it sitting on top.
Put ice cream into the freezer to allow it to firm up.
Notes
If you prefer, you can puree the strawberries if you would rather not have chunks of strawberry in the ice cream.The meringue cookies will soften in the ice cream and have a marshmallow like texture.
