Cheesy Potatoes are also known as Funeral Potatoes at our house and they are a delicious and easy make ahead side dish for any celebration or dinner.

Ingredients

frozen cubed hash brown potatoes

cup
sour cream

can
cream of chicken soup
1/2
cup
butter
melted

tsp
garlic
minced

tsp
minced onion

tsp
salt

pepper

cheddar cheese
grated

cups
cornflakes
crushed

butter
melted
1/3
cup
chives
chopped, additional for garnish
Instructions
Place thawed potatoes in a bowl.
Add in sour cream, soup and 1/2 cup melted butter. Mix to combined
Add in salt, pepper, onion, garlic, chives and cheese. Stir to combine.
Place in a 9 x 13 pan.
Mix crushed cornflakes with 1/2 cup melted butter. Stir to combine. Sprinkle over the top of the potatoes.
Bake at 350 degrees F. for 40-50 minutes or until bubbly and golden brown.
