Lemon Chicken Pasta
Delicious lemon chicken in a light lemon sauce served over pasta

- 3 chicken breasts boneless, skinless
- 1 Tbsp fresh rosemary minced
- coarse salt
- black pepper freshly ground
- 3 Tbsp honey
- 8 ounces thin spaghetti
- 2 Tbps butter
- 2 cloves garlic minced
- 1/4 cup real bacon bits
- 1 lemon juiced and zested
- 1/2 cup cream
- 3 Roma tomatoes seeds and core removed, diced
- 1/2 cup Parmesan Cheese shredded
- 2 Tbsp capers optional
Start a pot of water boiling to cook the pasta
Spray your BBQ grill rack with nonstick spray and fire it up
Sprinkle salt, pepper and rosemary on each chicken breast. And grill for 7-8 minutes on the first side
In a small bowl, mix 1 1/2 Tbsp. of freshly squeezed lemon juice and the honey together. Then brush honey lemon mixture on the tops of the chicken breasts before flipping them over
Brush the underside as well. Then grill until they are cooked through.
Remove chicken from grill. Cover on a plate to keep warm.
Add your noodles to the salted, boiling water.
Once noodles are nearly done, begin making the sauce by melting the butter in a skillet.
Add garlic and sauté for 2-3 minutes. Then add the bacon bits and cook for another minute.
Next, stir in any remaining lemon juice and all the zest. Then add the cream.
Drain the noodles, then add them to the sauce. Thin sauce with pasta water if needed.
Stir in the roma tomatoes, parmesan cheese, and capers. Then Top with thinly sliced chicken breast and serve immediately.
