Peanut Butter and Jelly Banana Bread

  • 2 cups all purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 2 eggs lightly beaten
  • 1 cup mashed bananas about 3
  • 1 cup sugar
  • 1/3 cup vegetable oil
  • 1/4 cup creamy peanut butter
  • 1/4 cup peanuts chopped
  • 1/3 cup strawberry jam


  • Preheat oven to 350 degrees F.  Grease bottom of a 9 x 5 bread pan.
  • In a bowl, combine all dry ingredients, flour, baking powder, baking soda, and salt.
  • In another bowl, combine vanilla, eggs, mashed bananas, sugar, oil and peanut butter.  Stir to combine.
  • Fold in peanuts and add wet mixture to dry mixture.  Stir just to combine.
  • Pour into prepared loaf pan.  Drizzle with 1/4 cup of the strawberry jam.  Use a knife to swirl the jam into the batter.
  • Bake for 70 minutes or until a toothpick comes out clean.  Cover with foil for last 15 minutes to prevent it from getting too brown.  Cool in pan on a wire rack.
  • Remove from pan when completely cool.  
  • In a small pan heat up the remaining jam and brush over the top of the loaf before slicing.
