Slow Cooker Shredded Chipotle Pork

Ingredients

  • 3 lbs. boneless pork roast
  • 1/2 tsp salt
  • 2 4 oz. cans mild diced green chiles
  • 4 cloves garlic minced
  • 1 onion chopped
  • juice of 2 limes
  • 1/4 C chipotle sauce or blend up canned chipotle peppers to equal 1/4 C
  • 1/2 C water
  • 1 1/2 tsp cumin
  • 1/2 C cilantro chopped
  • More cilantro for garnish

Instructions

  1. Place pork in slow cooker and season with salt.
  2. Add in chile peppers, lime juice, garlic and onion on top of pork.
  3. Mix together chipotle sauce and 1/2 C water, pour over pork.
  4. Cook on low for 6-7 hours until pork is tender and easy to shred with a fork.
  5. Remove pork and shred with a fork, place back into slow cooker.
  6. Add 1 1/2 tsp cumin and 1/2 C chopped cilantro.
  7. Stir and allow to simmer for about 30 minutes giving the pork time to absorb some of the juices.
  8. Serve as a burrito, taco, enchilada etc.
