Line a baking sheet with parchment paper and place one sheet of phyllo dough on it.
Gently press the lid of the brie lightly into the dough.
Add jam to center of dough and place wheel of brie on top.
Wrap the pastry around the brie, pressing edges closed and turn brie over so seam is down.
Cover puff pastry with egg wash.
Cut remaining sheet of pastry into 3/4 inch strips.
Cover brie with strips, wrapping it like a mummy.
Cover with egg wash.
Add almond eyes and bake for 20-25 minutes or until golden brown.
Serve with crackers
Notes
To rewarm leftover brie, place it in a baking dish and then cover with foil. Place in a 300 degree F oven and bake until warmed through and cheese is melted.You can substitute olives, blueberries, dried cranberry, raisins or mini pepperoni for the almond eyes.
