Chocolate Gingerbread Cookies

Ingredients

  • 2 cups of unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp ginger
  • 1/4 tsp cloves
  • 1 cup of butter softened
  • 1 cup of brown sugar
  • 1/2 cup molasses
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup chocolate chunks
  • granulated sugar for rolling

Instructions

  • sift together the cocoa powder, baking powder, and spices
  • cream butter with the brown sugar until light
  • add molasses, and eggs, stopping to scrape the sides of the bowl, and vanilla
  • mix in the cocoa powder, and fold in chocolate chunks
  • chill dough at least 1 hour
  • heat oven to 350 degrees
  • line baking sheets with parchment or silpat baking mats
  • scoop 1 tbsp of dough (a cookie scoop works well as this dough is sticky) roll until smooth, and then roll in sugar
  • place cookies on prepared sheets at least 2 inches apart
  • bake 10 minutes
  • allow to cool 5 minutes on sheets, and then carefully move to racks
