Tamale Pie

Ingredients

  • 1 lb. ground beef
  • 1/2 C chopped onion
  • 1 green pepper chopped
  • 1 15 oz. can tomato sauce
  • 2 15 oz. cans petite cut tomatoes
  • 1 4 oz. can sliced black olives
  • 3 cloves garlic minced
  • 1 Tbsp sugar
  • 1 tsp cumin
  • 1/2 tsp salt
  • 2 tsp chili powder
  • dash of black pepper

Cornmeal Crust I suggest doubling this

  • 3/4 C yellow cornmeal
  • 1/2 tsp salt
  • 2 C cold water
  • 1/2 tsp chili powder
  • 1 Tbsp butter

Instructions

  • Brown beef with onion, green pepper and garlic.
  • Add tomato sauce, tomatoes, olives, sugar, and seasonings
  • Bring to a boil and reduce to a simmer.
  • Simmer until liquid is gone and mixture has thickened

Cornmeal Crust

  • Combine cornmeal, salt, chili powder and water.
  • Cook over medium heat, stirring consistently until stiff.
  • Put 1/3 of mixture into bottom of cast iron pan or casserole dish
  • Add meat mixture
  • Top with remaining cornmeal crust.
  • Bake at 375 for 30-35 minutes
