Maple Syrup & Bacon Roasted Sweet Potatoes

  • 3 sweet potatoes peeled and diced
  • 8 slices of bacon cooked and diced
  • 1 Tbsp of fresh thyme
  • salt and pepper
  • 1/4 C maple syrup
  • olive oil


  • Drizzle olive oil over sweet potatoes and stir to coat.
  • Place on a parchment lined baking sheet.
  • Bake at 400 degrees for 15 minutes and toss.
  • Bake for an additional 10 minutes or until tender.
  • Place in bowl and add bacon and thyme.
  • Drizzle with maple syrup to taste
