light coconut milk

Royal Blend with Quinoa
1/2
C
red onion
chopped
1
C
carrot
grated or julienned
3
green onions
chopped
1/2
C
pistachios
shelled and chopped

Tbsp
fresh basil
chopped
juice of 1 lime
1/2
tsp
salt
Instructions
Cook rice blend in coconut milk.
Add in onion, carrot, green onion pistachios, basil, salt and lime juice
Can be served warm, cold or at room temperature
