Coconut Lime Quinoa Rice Salad

Ingredients

  • 2 C light coconut milk
  • 1 C Royal Blend with Quinoa
  • 1/2 C red onion chopped
  • 1 C carrot grated or julienned
  • 3 green onions chopped
  • 1/2 C pistachios shelled and chopped
  • 3 Tbsp fresh basil chopped
  • juice of 1 lime
  • 1/2 tsp salt

Instructions

  • Cook rice blend in coconut milk.
  • Add in onion, carrot, green onion pistachios, basil, salt and lime juice
  • Can be served warm, cold or at room temperature
