Baked Oatmeal for One
Baked oatmeal for one is the perfect way to start the day. Add in your favorite fruit and you have a delicious and healthy single serve breakfast that only takes minutes to put together.

Ingredients

Tbsp
butter
melted. Can also use coconut oil

honey
can also use maple syrup or brown sugar

egg

oats
I prefer old fashioned.

baking powder

salt

tsp
cinnamon
1/4
tsp
vanilla
1/4
cup
milk
I use 2 percent but can also use almond, soy or coconut milk.

cup
blueberries
or other fruit. Fresh or frozen
Instructions
In a bowl combined melted butter, honey and egg. Mix to combine.
Add in oats, baking powder, salt, cinnamon, vanilla, milk. Stir until combined.
Pour in blueberries.
Pour into a greased 2 cup baking dish
Bake at 350 degrees F for 30 minutes.

Notes
You can serve baked oatmeal warm, room temperature or chilled.
We like to add a scoop of plain Greek Yogurt or drizzle with some milk or cream.
Add some additional berries as garnish.
