A Giant Monster Cookie is a peanut butter, oatmeal and chocolate chip cookie all in one. It is naturally gluten free since it is made with peanut butter and oats and no flour!
In a bowl, combine butter, peanut butter and sugars. Mix to combine.
Add in beaten egg, vanilla, baking soda and salt.
Stir in oatmeal, chocolate chips and M & M's. Reserve a few M & M's to put onto the top of the cookie.
Place dough (it will be wet) into a 3 1/2 inch disc on a parchment lined baking sheet. Press extra M & M's into top of cookie.
Bake for 15-17 minutes or until golden brown around the edges and set in the middle.
Cool cookie on baking sheet.

This is a big, soft cookie. Allow it to cool completely before picking it up.If you need the cookie to be gluten free be sure you are using gluten free oats. Not all oats are gluten free.
