Chocolate Chip Cookies with a Twist

It’s been a bit chilly around the Northwest lately.  But any time the cold weather comes it totally puts me in a chocolate chip cookie mood.  Actually warm weather puts in the chocolate chip cookie mood too – any weather can do it!

I love changing up my favorite chocolate chip cookie recipe a bit – adding different mix ins etc.  Today’s recipe is packed with lots of amazing flavors!  Chocolate Malt Cookies have three kinds of chocolate, as well as malt and a little sea salt to top it off.

What is Malt?

Malt is a type of cereal grain, such as barley, that has undergone a drying process known as malting. It was originally considered a “health tonic” and was used as a supplement for babies. In 1922 it was added into milkshakes because adults were discovering they liked the taste too. Malt isn’t just for milkshakes anymore and can enhance the flavor of cookies, cakes and other baked goods.

What Does It Taste Like?

The malt adds another dimension to the cookie that I really love.  I am a big fan of malt but even if you aren’t you will love these cookies as there is not a strong malt flavor but just an added level of flavor that is wonderful! In addition to adding delicious flavor malt also has health benefits.

How to Make Malted Chocolate Chip Cookies

Chocolate Chips. I am a big fan of milk chocolate chips and white chocolate chips in my cookies but combine that with semi sweet chocolate like in these cookies and you’ve got all your bases covered.

Salt. A light sprinkling of coarse Kosher or sea salt or a coarse on top just gives it that extra little flavor surprise in your mouth!

Flour. This recipe uses a combination of all purpose flour and cake flour. I have made them just with all purpose flour and they are delicious but the combination of flours makes a slightly more tender cookie.

Triple Chocolate Chip Malt Cookies

Chocolate Malt Cookies are all of the chocolate goodness imaginable, complimented perfectly with malt and sea salt.

Total:30 minutes

Ingredients

  • 2¼ cups cake flour
  • 2 cups all purpose flour
  • 1¼ tsp baking soda
  • 1½ tsp baking powder
  • 1 tsp kosher salt
  • 2 ½ sticks salted butter, room temperature
  • 1¼ cups packed dark brown sugar
  • 1 cup plus 3 Tbsp granulated sugar
  • ½ cup malted milk powder
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups chocolate chips combination of milk, semi sweet and white chocolate
  • sea salt

Instructions

  • Cream butter and sugar until very light, about five minutes.
  • Add eggs, one a time, mixing well after each.
  • Add in vanilla. With mixer on low add in dry ingredients.
  • Add in chocolate chips.
  • Refrigerate dough two hours (I put it in the freezer for 30 minutes)
  • Bake at 350 degrees on parchment lined cookie sheets. Sprinkle lightly with sea salt before baking.
  • Bake 12-15 minutes
