Oatmeal Toffee Crisps - the perfect cookie,. Crisp on the edges and chewy in the middle

This Oatmeal Toffee Cookies makes a light, crisp cookie with the right amount of  chewiness in the middle.

Oatmeal Toffee Cookie Recipe

Oatmeal Toffee Cookies fall into the category of the perfect cookie.  Crisp on the edges and chewy in the middle.

When my kids were all at home I was one of those cookie making moms.  They would often come home to a fresh baked batch of cookies.  Whenever they had friends over there was always a batch of cookies to snack on.  I told them I did it for them but really, I LOVE a fresh baked cookie and I enoyed it as much as they did. It was the perfect way to indulge my love of a fresh baked cookie.

Now that my kids aren’t at home anymore I don’t have the excuse of baking for them and their friends anymore.  Good thing I have neighbor kids who I can use as an excuse.  But really, do you need an excuse to enjoy a warm, fresh baked cookie?

Oatmeal Toffee Cookie Recipe

Ingredients

These cookies are perfect for the person who, heaven forbid, doesn’t like too much chocolate in their cookies.  

  • Toffee Bits. You can use the ones covered in chocolate if you want a bit of chocolate in your cookies.
  • Oatmeal. The recipe calls for old fashioned oatmeal which will give you a chewier cookie, you can use quick oats if you prefer, the cookie just won’t be as chewy.
  • Brown Sugar. The recipe uses only brown sugar which adds to the chewiness and give the cookie great flavor.
  • Butter. Always butter.
  • Flour. I use unbleached all purpose flour.
  • Baking soda, baking powder and salt.
  • Cinnamon. This is optional but I love the flavor it gives the cookies.

If you prefer a little more chocolate add in some chocolate chips too.

 My friend Meg was over the day I made these cookies and she followed me around the kitchen and took some lovely photos –  it was so much fun.  I almost felt famous!

Oatmeal Toffee Cookies

This Oatmeal Toffee Cookie Recipe makes a light, crisp cookie with the right amount of chewiness in the middle.

Ingredients

  • 1 cup butter softened
  • 2 cups brown sugar
  • 2 eggs
  • 2 tsp vanilla
  • 1 3/4 cups flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 3 cup old fashioned oats
  • 1 1/2 cups Toffee Bits

Instructions

  • Cream butter and sugar, beat in eggs and vanilla.
  • Stir in dry ingredients, oats, toffee, and cinnamon
  • Drop by rounded spoonfuls on greased cookie sheets.
  • Bake at 350 for about 8 minutes.
  • Let sit on cookie sheets for 3-4 minutes before removing to cooling racks.

Notes:

  • Make sure you let the cookies sit on the cookie sheets for a few minutes or they will fall apart when you transfer them to the cooling rack.

    I am a bit confused and need clarification on the yield. At the top of the recipe it shows 24 cookies but at the end of the recipe the comment is “Makes about 5 dozen”

      I apologize for the confusion. It will vary considerably depending on the size of cookie that you make. If you use a tablespoon size scoop, you should get about 3 dozen cookies.

    I just stumbled onto this recipe, stunned that someone else puts Heath Milk Chocolate Toffee Bits in her oatmeal cookies. I’ve been doing this for about as long as these delicious add-ins have been around and people rave over them. Except for my kids. I can’t believe not even one of the four grew up loving toffee the way I do! My cookie recipe is very different from yours, but judging from the pictures, they taste about the same – crispy outside, soft and chewing inside.
    It doesn’t appear that many people have tried the recipe yet, but just in case someone else stumbles upon it, I wanted to encourage all toffee lovers out there to make these cookies!
