These copycat Costa Vida grilled chicken tacos pack a punch in the flavor department! And they are so easy to make at home.
Earlier this year we had a Costa Vida Mexican restaurant open up in the Portland/Vancouver area. It is one of my favorite restaurants to visit on my many trips to Utah so I was excited to have one much closer. I attended a blogger event when they first opened and they shared some of their recipes with us including their recipe for Grilled Chicken.
Previously, I have shared their delicious Grilled Steak Tacos with you which is my favorite thing on their menu but these grilled chicken tacos are a close second.
The chicken only has to marinate for about 30-45 minutes so you don’t have to plan too far ahead which is great. I hate it when the recipe calls for the meat to marinate overnight and I don’t remember until 4:00 in the afternoon! Story of my life. This marinade is delicious and has tons of flavor! It is made with a combination of olive oil, lemon juice, garlic, all purpose seasoning and salt.
After marinating, you just grilled the meat. It is so flavorful you could just eat it by itself. But it is also delicious on a salad or in these delicious grilled chicken tacos!
I used flour tortillas, but you can use corn tortillas if you prefer. I added in some chopped romaine lettuce, pico de gallo, homemade guacamole and cheese. So simple, and yet it makes a delicious and quick dinner!
Grilled Chicken Taco Recipe
Grilled Chicken Tacos
- 4 chicken breasts boneless and skinless
- 1/2 cup olive oil
- 1 Tbsp fresh garlic minced
- 1/4 cup all purpose seasoning like Lawrys
- juice of 2 lemons
- 12 tortillas
- pico de gallo
- grated cheese
- Combine all ingredients but chicken. Whisk to combine
- Place chicken in bowl.
- Add in marinade and coat chicken.
- Cover bowl with plastic wrap and refrigerate for 30-45 minutes
- Grill and slice.
- Add to tortilla with lettuce, pico, guacamole and cheese
