These copycat Costa Vida grilled chicken tacos pack a punch in the flavor department! They are so easy to make at home.
We are keeping our grill busy here in Portland. I think I have used my grill more already this year than ever before. I love my grill for several reasons but the number one reason is it sure cuts down on the mess in the ktichen One of my our go to summer meals is to marinate some cut of meat and throw it on the grill. Add in a nice salad and a side veggie, usually green beans or asparagus in the summer, and you’ve got a great, easy meal. I always try to throw on a few extra pieces of meat so I have leftovers for lunch the next few days.
Earlier this year we had a Costa Vida Mexican restaurant open up in the Portland/Vancouver area. It is one of my favorite restaurants to visit on my many trips to Utah so I was excited to have one much closer. I attended a blogger event when they first opened and they shared some of their recipes with us including this one for their Grilled Chicken. Previously, I have shared their delicious Grilled Steak Tacos with you which is my favorite thing on their menu but these grilled chicken tacos are a close second.
The chicken only has to marinate for about 30-45 minutes so you don’t have to plan too far ahead which is great. I hate it when the recipe calls for the meat to marinate overnight and I don’t remember until 4:00 in the afternoon! Story of my life. This marinade is delicious and has tons of flavor! It is made with a combination of olive oil, lemon juice, garlic, all purpose seasoning and salt.
After marinating I just grilled the meat. It is so flavorful you could just eat it by itself.
Slicing in up and putting it into a taco is just so much more fun! I used flour tortillas but corn tortillas would be great too. I added in some chopped romaine lettuce, pico de gallo, some homemade guacamole and cheese. I used Monterey Jack cheese but Cheddar or whatever you have on hand would work great too.
The meat would also be great added into a quesadilla or a burrito or served right off the grill with some potatoes or rice. Whatever your pleasure! So next time you need a quick, easy and flavorful meal, try these Costa Vida Copycat Grilled Chicken Tacos. You’ll be glad you did!
- 4 chicken breasts boneless and skinless
- 1/2 cup olive oil
- 1 Tbsp fresh garlic minced
- 1/4 cup all purpose seasoning like Lawrys
- juice of 2 lemons
- pico de gallo
- grated cheese
- Combine all ingredients but chicken. Whisk to combine
- Place chicken in bowl.
- Add in marinade and coat chicken.
- Cover bowl with plastic wrap and refrigerate for 30-45 minutes
- Grill and slice.
- Add to tortilla with lettuce, pico, guacamole and cheese
