Curried Butternut Squash Soup

Curried Butternut Squash Soup

Curried Butternut Squash soup is a delightful blend of flavors and it’s dairy free! A party is always a good excuse to experiment with a new recipe, right?!  That’s my entertaining philosophy.  I know it can be a bit risky but most of the time it works out for me.  There was that one dinner party disaster but fortunately they are few and far between. I was hosting my Ugly Christmas Sweater Tea Party last week and I was in charge of soup. My Beach Babe girlfriends are all great [Continue Reading…]

Minestrone Soup

Minestrone Soup

One of my favorite cookbooks is a family cookbook that my daughter put together years ago. It is called The Best of the Best Family Cookbook. My maiden name is Best, thus the name of the cookbook. It is full of the best recipes of many of the women in my family both past and present. My great aunt Dorothy is one of those women and she was a wonderful cook. I have fond memories of her and Uncle Bud who I affectionately called Uncle Bug. At one time she [Continue Reading…]

Mulligatawny Soup

Mulligatawny Soup

Mulliga what?  That’s exactly what I said when I ran into a friend from church at a local soup and salad restaurant.  She was going in to see if they had Mulligatawny soup that day.  I pretended like I knew what she was talking about and quickly went home and Googled it. Here is what I learned.  Mulligatawny soup is a curry flavored soup that is Anglo-Indian cuisine.  The soup is typically thickened with lentils or rice.  I Googled around some more and found various recipes for Mulligatawny Soup.  I [Continue Reading…]

Curry Pumpkin Soup

Pumpkin Curry Soup

I think I should have named this soup Heavenly Soup instead of Curry Pumpkin Soup. The first time I ever tried  a squash type soup was an evening I will never forget.  Jim and I were in Acapulco and were attending an “all white” dinner in a home that sat on a cliff overlooking the ocean.  Everyone was dressed in white, the tables and decor were all in white. White lights were everywhere.  We truly felt like we had just stepped into heaven.  It had the most amazing ethereal feel [Continue Reading…]

Thai Coconut Chicken Soup

Coconut Curry Chicken Soup

My kids love Thai food.  I usually play it pretty safe and order some type of chicken and cashew over rice dish but my children have a little more sophisticated taste than I do.  Tessa introduced me to one of her favorite Thai soups – a chicken coconut soup.  It was delicious!    I decided to try and recreate something similar at home.  I found a recipe for a Thai Coconut Chicken Soup in America’s Test Kitchen Family Cookbook that I adapted  and Jim and I both loved the results. [Continue Reading…]

Italian Wedding Soup

Italian Weddng Soup

Over the holiday break we attended a wedding that had a soup and sandwich bar.  A fun idea.  There were several different selections of soup and I went for the Italian Wedding Soup – it was a wedding after all!  The mother of the bride had made all the soup herself!  I had never had Italian Wedding Soup before and it was delicious. This is a traditional Italian-American soup that contains green vegetables (in this case spinach) and some kind of meat (pork).  According to Wikipedia, “The term “wedding soup” [Continue Reading…]

Chicken Enchilada Soup

Chicken Enchilada Soup

We are in major count down mode at our house.  We’re not counting down the days until Christmas but rather counting down the days until the kids arrive home!!  The first one arrives home tomorrow and by Saturday evening they will all be home.  I’m just a little excited. One of my goals is to have as much Christmas prep and blog work down before they get home as I can so that I can really enjoy my time with them and have as few distractions as possible.  So that [Continue Reading…]

French Onion Soup with Slow Cooker Caramelized Onions

French Onion Soup

The very first thing I ate after arriving in Paris last Spring was French Onion Soup.  Of course in Paris it is not called French Onion Soup – it is called Soupe à l’oignon.  No need for the French part because you’re in France! Whenever I go to a restaurant that has French Onion Soup on the menu I order it.  I love it but I had never made it at home.  I had decided it was just too hard to make at home.  I am happy to report that I [Continue Reading…]
