Tomato Basil Tart

Tomato Basil Tart

Today I’ve got another Recipe Redo for you – one of my favorite recipes I shared in the beginning days of my blog that is so good it deserves a little facelift. This recipe for Tomato Basil Tart is a  perfect dish for a brunch, luncheon or as a side dish for dinner.  You can combine it with a green salad and you have a meal. It is also a great dish for a picnic which is how I recently enjoyed it. This recipe came  from my mother who had attended a [Continue Reading...]

Mexican Cole Slaw

Mexican Cole Slaw

I have recently discovered the wonders and beauty of cole slaw. In fact, not only have I learned to enjoy it as a salad/side dish but I have also discovered the yumminess of topping my burger or pulled pork sandwich with cole slaw. I love the crisp texture of the cabbage and I also love how relatively easy it is to put together.  It especially makes a nice addition to a Mexican themed dinner when you add a little kick to it. This Mexican Cole Slaw also fits the pretty [Continue Reading...]

Balsamic Glazed Carrots

Balsamic Glazed Carrots

Usually when I hit the produce section of the grocery store I head right to the green vegetables – broccoli, asparagus, green beans.  But earlier this week the green vegetables weren’t looking so hot.  The asparagus was too thick, the green beans were too shriveled and I just wasn’t in the mood for broccoli.  I needed a vegetable to take to a potluck dinner.  (The same one I took t his yummy cashew nut rice dish to.) So I headed over to the orange vegetables – the carrots to be [Continue Reading...]

Over the next few days I am going to be sharing some of our favorite Thanksgiving menu items! We’ll be spending the holiday with the four kids and about 40 of Jim’s family in Utah.  We volunteered to host dinner.  Fortunately my lovely niece Emily (love that girl!)  is letting me use her house and kitchen!  I also have some amazing sister in laws and mother in law who have volunteered to help! Today’s recipe is one that was shared with me about 25 years ago by Jim’s Aunt Dawn.  [Continue Reading...]

Baked Beans

As promised I am sharing my baked bean recipe that we served with our early Father’s Day dinner last week. This recipe came from my husband’s Aunt Dawn and has been a family favorite. One of the tricks of wonderful baked beans is baking them for a long time.  These beans bake for 3 hours so be sure and plan ahead. Baked beans are a frequent menu item at our house during the summer – a great side dish for all those fun barbecues you  have during the summer. The [Continue Reading...]

We eat a lot of Mexican food at our house. We love: Fabulous Fajitas Cafe Rio Pork Costa Vida Chicken Bajio Chicken Chile Salad We also eat a lot of rice at our house, especially with Mexican food.  One of my favorite rice recipes is for Lime Cilantro Rice. I also love the red rice you get in most Mexican restaurants.  The only problem is I haven’t been able to find a recipe for that type of rice that I really like.  I usually end up going to our local [Continue Reading...]

Teriyaki Hamburgers and Roasted Potato Wedges

Teriyaki hamburgers

We actually had a taste of summer here in Portland last week – a couple of 80 degree days!   I knew it wouldn’t last so we had to take advantage! It was perfect BBQ weather!  Nothing tastes better than a home grilled hamburger. Especially  Teriyaki Hamburgers. One of our favorite ways to fix hamburgers is a recipe I found in Southern Living’s Easy Weeknight Favorites.  A great cookbook full of quick and easy dinner ideas.  Their recipe for Hamburgers Teriyaki is quick and yummy. I jazzed the hamburger up a [Continue Reading...]

As promised I am going to be sharing some of my favorite “green” recipes the next few days in honor of St. Patrick’s Day. Truth be told, I am not a big fan of St. Patrick’s Day.  In fact I have even been known to NOT wear green on St. Patrick’s Day – even though it is my favorite color! Growing up I was NOT a fan of green foods.  In fact, the only green food I ate was green beans – out of a can! As I have gotten [Continue Reading...]
