Quinoa Salad with Mango, Pineapple & Mint

Quinoa Salad with Mango, Pineapple and Mint

Quinoa Salad with Mango, Pineapple & Mint is the perfect summer side dish.  So delicious and an amazing flavor combination. If you followed along on my fun trip to NYC on Instagram you saw that we visited alot of bakeries and ate a lot of ice cream.  But we did eat some amazing “real food” too.  My first night in NYC Tessa took me to a delightful restaurant, Westville.  We ate at the one in Chelsea but they also have two other locations.  One of the side dishes we had was [Continue Reading…]

Rice Pilaf

Rice Pilaf @yourhomebasedmom

Rice Pilaf is a go to side dish at our house.  We serve it with everything! Today’s recipe is a Wilkes family classic.  This recipe has been made hundreds of times at our house.  It is probably the side dish I make the most. Because I am not a potato eater we eat a lot of rice at our house.  I have lots of different rice pilaf recipes but I have to say that this one is our absolute favorite.  I always double the recipe because my kids love it [Continue Reading…]

Red Pepper Asparagus

Red Pepper Asparagus

Asparagus is one of my most favorite vegetables and we eat it lots at our house and this red pepper asparagus is a fun way to prepare it. .  Probably more than any other vegetable.  Today I am sharing a little dressed up version of my favorite vegetable. Usually when I cook it I just simply roast it with some olive oil and kosher salt but for something special like Easter it is fun to dress it up a bit. The first step is to roast it in the oven with some olive oil, fresh [Continue Reading…]

Roasted Carrot Salad

Roasted Carrot Salad

It’s a new year and we are all trying to healthier right?  Which means eating more veggies!  Let me tell you, you won’t feel like you are eating your veggies with today’s recipe. It is so good.  I didn’t know I liked carrots so much. In fact my husband hasn’t stopped talking about this salad since I made it. Roasting a carrot makes them so sweet that you almost feel like you are eating candy.  Really! This salad is a fun combination of colors, flavors and textures. I started by [Continue Reading…]

Garlic Ginger Green Beans

Garlic Ginger Green Beans

I have lost track of how many times I have made these garlic ginger green beans this summer.  We have become somewhat addicted.  In fact,  I made them twice this past holiday weekend for two different parties we went too.  They disappeared both times and the comments and compliments didn’t stop coming! My green beans in the garden are finished so I’m now buying them at the farmer’s market and/or the grocery store.  I never leave the store without a bag of fresh green beans because these beans are on [Continue Reading…]

Teriyaki Glazed Roasted Brussels Sprouts

Roasted Brussel Sprouts

My mom is going to be happy to hear that I have finally learned to eat my vegetables – even brussels sprouts!  My vegetable repertoire was rather limited as a child.  I ate canned green beans and that was it.  So it is not a surprise that until a few weeks ago I had never eaten  brussels sprouts!  I was not a very adventurous eater, even as an adult.  It hasn’t been until the last 6-10 years or so that I have really learn to branch out in my food [Continue Reading…]

Cashew Nut Rice

Cashew Nut RIce

This cashew nut rice is a fun dressed rice dish.  Lots of great color and texture. Once a month we have a potluck dinner with a group of our friends who are also recent empty nesters.  We do it on Monday night – the night we reserve for spending with our family.  Since none of us have kids at home anymore it is fun to spend it together.  It doesn’t seem quite so lonely that way.  We take turns hosting at our homes and the host prepares the main dish [Continue Reading…]

Tomato, Pesto and Mozzarella Tart

Tomato, Pesto and Mozzarella Tart

I woke up to two large bowls of tomatoes on my kitchen counter yesterday. Why is it that they all have to come ripe all at the same time! The tomatoes aren’t big this year but they are sweet and juicy. I knew I had to get busy and start doing something with them. I had book club yesterday morning so I called my friend who was hosting and asked her if I could please bring something – how about a tomato tart I asked? She quickly agreed. Since book [Continue Reading…]

Nutty Brown Rice

Brown RIce

Because I am basically a non-potato eater, we eat a lot of rice at our house.  In the last few years I have developed a love for brown rice.  I love the nutty flavor, the crunchy texture and the fact that it is healthier for you than regular white rice.  Brown rice also has a lower glycemic value which is a good thing. Brown rice  is not processed as much therefore preserving more of the nutritional value. The only downside to brown rice is that it takes longer to cook [Continue Reading…]
