Crock Pot Salsa Chicken

Crock Pot Salsa Chicken

Today I’ve got another Recipe Redo for you.  A recipe that is buried deep in the archives of the blog.   It is also  one that had no pictures with it – just a recipe.  It was actually the third recipe I ever shared on this blog! Crock Pot Salsa Chicken is one of those easy, easy dinners.  It is what I like to call a “dump” recipe.  You just dump everything in the pan or in this case the crock pot and let it cook.  Doesn’t get much easier.  I [Continue Reading...]

Mango Salsa

Today I am sharing a recipe that is a little heat and a little sweet over at I Heart Naptime.  It is a recipe for a yummy Mango Salsa.  It is so delicious and so pretty!!   We are huge Mexican food fans at our house and our first and most important criteria for a Mexican restaurant is how good their chips and salsa is!  We are serious about our chips and salsa!! This salsa would also be delicious served with chicken or fish.  Come back tomorrow to see what I [Continue Reading...]

Roasted Corn, Strawberry and Avocado Salsa

Roasted Corn, Strawberry and Avocado Salad

We had a potluck BBQ on Monday.  I love potlucks.  It never fails that I come away with at least one new great recipe.  This time it was an amazing Greek pasta salad. I promise as soon as I get the recipe I’ll share! I provided a s’mores bar and an Italian Soda Bar.  Let me tell you, if you ever want to make a group of middle school aged boys happy, have an Italian Soda Bar!!  They loved it and I think they went through eight bottles of syrup! Salsa – Quick and Easy

Salsa

What would a proper Cinco de Mayo celebration be without some chips and salsa? If you have never made your own salsa before because you thought it was too much work, too much chopping, today’s recipe is for you. It doesn’t get any quicker or easier than this.  O.K., except maybe buying it at the store. We love to go out for Mexican food and one of the reasons is the chips and salsa.  I love restaurant style salsa.  It’s not too chunky but just a little chunky. Over a [Continue Reading...]

Cranberry Salsa

Cranberry Salsa

I have been on a bit of a cranberry craze this fall. First there were those yummy egg nog cranberry white chocolate muffins (which seriously, if you haven’t tried, you really need too!) and then the cranberry pineapple muffins which were so nice and moist.  And then I came up with the yummy cranberry cream cheese bars which were quite delightful!. To be perfectly honest, I don’t think I have ever really cooked or baked with cranberries before.  Beside opening that can of cranberry relish on Thanksgiving, I had never [Continue Reading...]

Canned Salsa

Canned Salsa

I use to can a lot – peaches, pears, apple pie filling, grape juice etc.  Those were the good old days. It’s been years since I got out that old hot bath canner.  In fact it has been so many years that when I went to look for it this weekend I couldn’t find it.  We’re thinking it is up in the attic behind all the Christmas decorations with all the empty canning jars I don’t use any more! I decided that I wanted to can some salsa this year.  [Continue Reading...]

Balsamic Black Bean Salsa

Balsamic Black Bean Salsa

I have lost track of how many times I have made this salsa.  It has been my go to appetizer for the last few months whenever I am asked to bring something to a potluck.  Every time I have made it I’ve been asked for the recipe – that’s a good sign it is definitely a keeper. This recipe comes from my friend Melanie over at My Kitchen Cafe –  my go to food blog for recipes that don’t disappoint! Not only is it delicious but the colors are so [Continue Reading...]

Cowboy Caviar

Cowboy Caviar

Don’t ask me why this is called Cowboy Caviar because I have no idea.  What I do know though is that it is yummy.  I got the recipe from my sister in law Jayna who fixed it for Grandma and Grandpa Wilkes’ 80th birthday party a few years ago. It has become a favorite summer appetizer at our house, especially when tomatoes are in season.  Last summer I took it to a potluck and so did two other women.  They were all slightly different versions and I have to say [Continue Reading...]
