Enjoy all the flavors of Mexican Street Corn without the mess with this Roasted Mexican Corn Salad. During the summer Portland has a lot of street fairs. Come check it out – you’re going to love it! Roasted Corn and Tomato Bruschetta is the perfect summer appetizer.
