Sesame Chicken

Today I am doing a Recipe Redo. I have been sharing recipes with you for 5 years now!  That is a lot of recipes. I also shared a lot of our very favorite family recipes in the beginning.  Back when my photographs weren’t so pretty and back when I even did some posts without photographs!!  Hard to imagine I know. So I have decided to redo some of the recipes I shared in the very beginning – thus Recipe Redo!  Once a week or so I will redo a family [Continue Reading…]

Buttermilk Chicken with Sweet Tomato Relish

Buttermilk Chicken with Sweet Tomato Relish

Yum. Yes, yum! I actually can’t believe I’m so excited about something made with tomatoes.  I never ate tomatoes as a kid, as a teenager, as a young adult and even as a not so young adult but as a middle aged adult I have learned to love and appreciate tomatoes. I think I have a new favorite condiment – sweet tomato relish.  I made a batch of this last week for the bridal shower I hosted.  I served it on  crostini that was spread with a little roasted garlic [Continue Reading…]

Asian Chicken Wraps

Asian Chicken Wraps

I thought I’d start the week out with an easy and delicious dinner idea. Lately I haven’t been very good about planning my meals for the week. I think it is a combination of being out of town, being an empty nester and a little boredom. In fact, my sweet husband, who never complains mentioned after two nights of take out that he was looking forward to a home cooked meal. I had been out of town for 5 days and he had to fend for himself. So today’s recipe [Continue Reading…]

Chicken Pot Pie with Crumble Topping

Chicken Pot Pie

Giveaway Alert!  My daughter Tessa has a fun giveaway going on over at her blog today.  Just leave a comment to win a gift card to a very fun shop that makes darling hats, gloves, cowls and ear warmers.  Check it out! I have never made chicken pot pie before.  I think it is the pastry part that scares me away.  I am not a big pie maker and usually default to a premade crust when making a quiche or some other recipe that calls for a pastry crust. A [Continue Reading…]

Oregano Chicken

For years I was strictly a white meat kind of girl.  I always chose the breast over the thigh.  Fortunately my husband enjoyed the dark meat so it balanced out quite nicely. Well, a few years ago I discovered how moist and lovely dark meat can be and started using chicken thighs in my cooking.  Not only are they nice and moist but they are also a lot less expensive! This recipe calls for chicken thighs but for you non dark meat eaters it would also work just fine with [Continue Reading…]

Cashew Sesame Chicken

So I totally freaked myself out last Friday.  I was rushing around like a wild woman trying to get a Valentine’s package put together for my kids in Utah and I was also stressing that I hadn’t share this amazing dessert recipe with you that would be perfect for Valentine’s Day.  I was stressing because for some strange reason I thought Valentine’s Day was this week!  I was only 3 weeks ahead of myself!  Not sure where that came from but when I finally looked at my calendar and realized [Continue Reading…]

Chicken and Wild Rice Soup

Chicken and Wild Rice Soup

Over the last 20 years I have probably made 25 or more business trips to Minnesota. I think each time I have gone I have enjoyed a bowl of Chicken and Wild Rice Soup.  It is a Minnesota kind of soup.  I’m not sure why but Minnesota makes the best Chicken and Wild Rice Soup. Whether I am there in the summer or winter there always seems to be a bowl of Chicken and Wild Rice Soup to enjoy. I decided it was time to make it in Oregon.  I [Continue Reading…]

Enchilada Quiche

Quiche is not just for breakfast.  Today’s recipe for enchilada quiche is a great dinner time option. I originally found this recipe in The Oregonian years ago and we have been enjoying it ever since. It has the look and texture of a quiche but the taste of an enchilada. I took the easy route and used a store bought pie shell.  I like the ones you find in the freezer section, that come in the pan. The quiche is perfect paired with a nice salad, some sour cream  and [Continue Reading…]
