Tex-Mex Chicken Salad

Tex-Mex Chicken Salad

We’ve enjoyed a few sunny and warmer days here in the Northwest.  Now warmer for us is 60 degrees. I know that isn’t as warm as some places but I know it is warmer than others!  A little sunshine and warmer temperatures always puts me in the mood for a good salad for dinner. Today’s salad is a recipe I got from my sister in law.  It has been in my pile of recipes for years and I have hung on to because I know it is a good one [Continue Reading...]

BBQ Chicken Quinoa Salad

BBQ CHicken Quinoa Salad

We are loving quinoa at our house especially in light of our latest gluten free adventure.  Quinoa is a nice alternative to rice and is so much better for you.  It’s protein!  I love how versatile it is too. Layered Chicken & Berry Salad

Layered Chicken & Berry Salad

We are trying to take full advantage of berry season here in the Northwest by adding berries into every recipe we can.  Desserts, breakfast, appetizers, main dishes and salads.  I’ve been doing  a pretty good job of it if I do say so myself.  Is it possible to get berried out?  I don’t think so! I’ve got lots of fun berry recipes coming up. But if you have already forgotten, I am sharing dinner recipes this week that can be made from a rotisserie chicken – quick and easy summer [Continue Reading...]

Chicken Napa Salad

Chinese Cabbage Salad

So we have been adjusting to an empty nest.  I have found one of the biggest adjustments is the way I cook. We have a lot more leftovers than we use to have.  My husband doesn’t mind because he knows he will have something other than a peanut butter and jelly sandwich to take to work for lunch the next day. One of my favorite, quick and easy summer dinner ideas is a Chicken Salad.  Just pick up a rotisserie chicken at Costco or the local grocery store and use [Continue Reading...]
