Fresh Blueberry Ice Cream

I have to begin this post with a direct quote from my husband upon tasting today’s treat. “This is the BEST ice cream you have ever made!” This comment was not made once but made multiple times while he enjoyed his bowl full of Fresh Blueberry Ice Cream. This is REALLY the BEST ice cream you have ever made!” I think he liked and I liked it too.  Actually I think you can say we LOVED it!  We had the sister missionaries from our church over for dinner this week [Continue Reading...]

Raspberry and Blueberry Crisp

One thing the Northwest does right is berries! You name it – we’ve got it. Strawberries, raspberries, blueberries, blackberries, marionberries, tayberries and even loganberries. And I know there are more I haven’t even named. My oldest son’s name is Logan – I teased my husband I wanted to name him after my father Barrie – therefore he would have been Logan Barrie (loganberry) He didn’t go for it! Yesterday I shared a fun Mason Jar Picnic idea and the dessert I took on the picnic was today’s recipe for Raspberry [Continue Reading...]

Lemon Blueberry Marble Cake

Lemon Blueberry Marble Cake

MUST. MAKE. This was the body of the email my friend Sherra sent me with a link to the recipe I am sharing with you today. The recipe was for a Lemon Blueberry Marble Cake. We celebrated my mom’s birthday this last weekend so I thought that was the perfect opportunity to give it a try.  I love baking cakes.  Cakes like this one take a little time and effort and I really enjoy that process and time in the kitchen.  This is not a “quick I need a dessert” [Continue Reading...]

Layered Salad with Raspberry Poppyseed Dressing

Layered Chicken & Berry Salad

We are trying to take full advantage of berry season here in the Northwest by adding berries into every recipe we can.  Desserts, breakfast, appetizers, main dishes and salads.  I’ve been doing  a pretty good job of it if I do say so myself.  Is it possible to get berried out?  I don’t think so! I’ve got lots of fun berry recipes coming up. But if you have already forgotten, I am sharing dinner recipes this week that can be made from a rotisserie chicken – quick and easy summer [Continue Reading...]

Baked Oatmeal

I have been doing a lot of experimenting in the kitchen the last few weeks.  Most of it has involved things like rice flour, tapicoa flour, potato starch, xanthan gum, honey, agave,  etc.  All of this in our attempts to help Cali feel better.  We paid a visit to our favorite naturopath and after a series of food sensitivity tests we decided to pull her off wheat (gluten is not a problem), sugar, dairy, red meat, yeast, and a whole list of other things.  The whole thing was a little [Continue Reading...]

Lemon Blueberry Muffins

After a few spring like days here in Portland I have a definite case of Spring Fever.  And with Spring Fever comes a longing for lemons. Lemons and Spring just go together and so do lemons and blueberries – yum!! But a lemon blueberry muffin? Even better! Today’s muffin is a result of my brief case of Spring Fever (Spring has now left the NW and the gray skies and rains are back) I played around with this muffin recipe a few times to get the texture just right.  The [Continue Reading...]

Blueberry Banana Cake with Lemon Cream Cheese Frosting

What do you usually do when you have ripe bananas on the counter?  Make banana bread? I usually do.  Well, that was until I found this recipe for Blueberry Banana Cake with Lemon Cream Cheese Frosting over at my friend Laura’s site – Real Mom Kitchen. I now have a new reason to let my bananas get too ripe. Cali and I had just been out blueberry picking. So in addition to the ripe bananas, I had a bucket full of fat, juicy, yummy Oregon blueberries too!  How lucky can [Continue Reading...]

We are having too much fun at our house this week. Clark is home from his European Adventures. Logan is home for a visit before he starts his grown up, real job on Monday. Cali is packing up to head back to college and Tessa has her schedule and is ready to start her Junior year of high school. Today’s post will be a quick one.  I wanted to share this fun and yummy recipe with you because now is the time of year to make it – when you [Continue Reading...]

Blueberry Crumb Bars

blueberry crumb

Since blueberry season is in full swing here in Oregon and I still had blueberries left over from my Saturday morning trip to the Farmer’s Market today’s recipe was the perfect fit. I love berry pies – all kinds. Just like the Marionberry Bars I posted last summer, these Blueberry Crumb Bars are almost like eating a berry pie – just in the form of a bar!  And if you haven’t tried the Marionberry Bars you are definitely going to want to do that!!  They are so good.  If you don’t [Continue Reading...]
