Beef Taquitos

Beef Taquitos

I did a lot of cooking over the holidays.  I also ended up with a lot of leftovers.  The day after the kids went back to school I did a refrigerator clean out and inventory. I think we could have fed a small country. There was so much stuff in there Jim and I ate from it the entire week! Jim doesn’t mind leftovers but I do so I have to put a new spin on them.  But the trick is you don’t want that remake to take too much [Continue Reading...]

Beef Fajitas

Beef Fajitas

I have been on a quest. To discover a great beef fajita recipe. I have done lots of experimenting the last month or so and I think my family is a little tired of fajitas. I have experimented with different cuts of meat – several types of steak including skirt steak and flank steak. The winner is definitely flank steak.  If you are going to use skirt steak be sure and marinate it over night. I have also had fun trying different marinades and today’s recipe is the winner. Allowing [Continue Reading...]

Flat Bread Tacos

Flatbread Tacos

When my kids were little I had my list of “go to” meals.  Things we had over and over again.  I didn’t try new recipes and experiment as much back then as I do now.  I just wanted to get dinner on the table! One of our standard meals was tacos.  It was quick and it was easy – a pound of hamburger, some pre made crispy taco shells and a few toppings.  For my kids it was basically ketchup and grated cheese! Today’s recipe is a stepped up version of those tacos.  [Continue Reading...]

Marinaded London Broil

London Broil

Since I am in London this week I thought a recipe for London broil would be very appropriate! It’s June and that means it must be summer right?  Before I left for London it seemed like Portland couldn’t quite make up its mind – rain, sun, rain, sun!  Regardless of the weather we have fired up the BBQ and it is open for the season! Our favorite day to grill is Sunday.  I put something in to marinade Saturday night and it’s ready to grill as soon as we get [Continue Reading...]

Ginger Steak Salad

steak salad

I made this recipe several months ago and we loved it. I’m not sure why it’s taken me so long to share it with you. I made this during my short lived low glycemic phase.  I have made lots of salads topped with chicken and even pork but I haven’t used red meat before but I loved it.  Even with red meat this salad was very light yet filling and satisfying.  Even my sweet tooth felt satisfied! I found this recipe while I was doing some looking around over at [Continue Reading...]

Beef Enchiladas

beef enchiladas

I think my favorite ethnic food group is Mexican.  It is usually my food of choice when I get to pick where we go out to eat. One of my favorite food memories growing up are the yummy cheese enchiladas my mom made. When I was in college I would save up my food money and treat myself to a cheese enchilada in the BYU Cougareat once a week! And still, when we go out for Mexican food, my choice is always the same – cheese enchiladas! I am not [Continue Reading...]

Mongolian Beef

Mongolian Beef

As I logged into the dashboard of my blog yesterday I noticed that I had written 499 posts.  That means that today’s post is my 500th post!!! It is hard to believe that I have actually found 500 things to blog about over the last 2 1/2 years!  My biggest fear when I first started blogging, other than that no one would read my blog, was that I’d run out of things to blog about.  So far that hasn’t been a problem! So welcome to my 500th post here on Your [Continue Reading...]

Grilled Marinated Flank Steak with Chimichurri Sauce

grilled marinated steak with chimchurri sauce

Last week I received a copy of Emeril Lagasse’s newest cookbook to preview and share with you – Emeril at the Grill: A Cookbook for All Seasons.   I have lots of recipes marked to try. I let Clark choose the first recipe to share with you and it was no surprise when he chose Grilled Marinated Flank Steak with Chimchurri Sauce. It was no surprise because whenever one of the college boys comes home for a visit they always request flank steak.  Also, my older son Logan served a mission [Continue Reading...]

Teriyaki Hamburgers and Roasted Potato Wedges

Teriyaki hamburgers

We actually had a taste of summer here in Portland last week – a couple of 80 degree days!   I knew it wouldn’t last so we had to take advantage! It was perfect BBQ weather!  Nothing tastes better than a home grilled hamburger. Especially  Teriyaki Hamburgers. One of our favorite ways to fix hamburgers is a recipe I found in Southern Living’s Easy Weeknight Favorites.  A great cookbook full of quick and easy dinner ideas.  Their recipe for Hamburgers Teriyaki is quick and yummy. I jazzed the hamburger up a [Continue Reading...]
