Steak Soup

Steak Soup

We are definitely in a soup mode around here.   My husband loves soup for dinner but I know there are some men that don’t consider soup a meal.  Today’s recipe for Steak Soup is a meal. It is pretty much a complete meal.  You’ve got your vegetables, your starch and your protein all in one bowl. Throw together a loaf of No Knead Artisian Bread the night before and you’ve got a delicious and hearty meal that will make even your “soup is not a meal” believers happy. This soup [Continue Reading…]

Crock Pot BBQ Beef

BBQ Beef in Crock Pot_0007(1)

Wondering what to serve on those yummy homemade hamburger buns I shared yesterday besides hamburgers?  I’ve got you covered. School is out here in the NW and so it is officially summer! Summer time brings it’s own set of challenges when it comes to dinner time. I like to play as much as the kids do in the summer so the goal is to spend as little time in the kitchen as possible. When you get rid of the routine of school somehow that routine of dinner gets harder and [Continue Reading…]

Brisket Tacos with Mango BBQ Sauce in the Crock Pot

Brisket Tacos with Mango BBQ Sauce

I think I have finally embraced my crock pot. I am not sure why it has taken me so long.   I keep thinking about all the years I have missed out on of enjoying the ease of having dinner cooking first thing in the morning and not having to stress mid afternoon about what I’m going to fix!  I may be slow but I eventually get there! Today’s recipe for Brisket Tacos with Mango BBQ Sauce in the Crock Pot uses one of my favorite cuts of meat.  I love [Continue Reading…]

Flank Steak with Pesto

It’s funny, when the kids were home I never really got into celebrating St. Patrick’s Day.  I usually wore green on the actual day but sometimes I didn’t and I usually served something green for dinner but that’s about it.  I think now that the kids are gone, decorating for the holidays, making holiday treats, and planning green food helps me not miss them as much.  Maybe. One of our favorite cuts of meat is flank steak.  We love to marinade it and throw it on the grill for Fast [Continue Reading…]

Beef Taquitos

Beef Taquitos

I did a lot of cooking over the holidays.  I also ended up with a lot of leftovers.  The day after the kids went back to school I did a refrigerator clean out and inventory. I think we could have fed a small country. There was so much stuff in there Jim and I ate from it the entire week! Jim doesn’t mind leftovers but I do so I have to put a new spin on them.  But the trick is you don’t want that remake to take too much [Continue Reading…]

Beef Fajitas

Beef Fajitas

I have been on a quest. To discover a great beef fajita recipe. I have done lots of experimenting the last month or so and I think my family is a little tired of fajitas. I have experimented with different cuts of meat – several types of steak including skirt steak and flank steak. The winner is definitely flank steak.  If you are going to use skirt steak be sure and marinate it over night. I have also had fun trying different marinades and today’s recipe is the winner. Allowing [Continue Reading…]

Flat Bread Tacos

Flatbread Taco

When my kids were little I had my list of “go to” meals.  Things we had over and over again.  I didn’t try new recipes and experiment as much back then as I do now.  I just wanted to get dinner on the table! One of our standard meals was tacos.  It was quick and it was easy – a pound of hamburger, some pre made crispy taco shells and a few toppings.  For my kids it was basically ketchup and grated cheese! Today’s recipe is a stepped up version of those tacos.  [Continue Reading…]

Marinaded London Broil

London Broil

Since I am in London this week I thought a recipe for London broil would be very appropriate! It’s June and that means it must be summer right?  Before I left for London it seemed like Portland couldn’t quite make up its mind – rain, sun, rain, sun!  Regardless of the weather we have fired up the BBQ and it is open for the season! Our favorite day to grill is Sunday.  I put something in to marinade Saturday night and it’s ready to grill as soon as we get [Continue Reading…]
