I have never frozen them but think they should be fine.  You can freeze cheesecake so think these would be the same.  Here&#039;s the large quanity recipe - have fun!
Oreo Truffles 

120 Oreos (14 per package in Costco pack)
32 oz. cream cheese, softened 

Crush about 25 Oreos in food processor to fine crumbs.  Set aside for rolling.  Crush remaining cookies.  Add cream cheese.  Mix until well blended.  Roll into small balls ~1” in diameter.  Roll in reserved cookie crumbs.  Refrigerate.  This should make 150-200 truffles, depending on the size.  The goal is have them be bite-size.  All measurements are approximate, depending on how much cream cheese vs. oreo flavor you like.  You can also dip them in white or dark chocolate instead of rolling them in crumbs.</description>

You melt caramel squares (or the little bits they make now)  And scoop small dollops of the caramel in between  2 Nilla Waffers.  Stick a sucker stick in the caramel.  After it has set up some you dip the whole thing into melted chocolate. Decorate with Valentine sprinkles.</description>
