I love color.

Color in my home, in my clothes and in my food.

And there are occasions when only BOLD color will do.  Bright, intense color.  That is what you get with the new Pillsbury Funfetti®  Bold Cake Mixes.  The folks at Pillsbury really went bold when they released their new Funfetti® line of cake mixes and bold frostings.

They come in 5 bold colors and food shouldn’t be this fun!  My favorite occasion to really go bold is birthdays and I decided the Neon Yellow Bold Funfetti® Cake mix was my favorite.  Love me some yellow.

Of course cake and ice cream are a must at every birthday so why  not combine the two into an ice cream cupcake.  I mixed up the cake mix according to the directions and lined my muffin tins with liners.  I then placed about 2 teaspoons of cake batter in the bottom.

and baked them for about 5 minutes or until a toothpick came out clean.

Let the cake cool and then fill the rest of each muffin tin with your favorite ice cream.

Guess what flavor mine is?  Lemon of course!  I used some lemon sorbet on half and some lime sherbet on the half of the cupcakes for a fun lemon/lime combination.

Pop them in the freezer and allow the ice cream to set up and get hard.

Then just remove the liner and top them with some whipped cream and funfetti sprinkles.  I used the ones out of the Orange All Star Funfetti® Frosting.

These ice cream cupcakes are just the right ratio of cake to ice cream!  And of course the whipped cream and sprinkles on top makes it more fun to eat.

Pillsbury Funfetti Bold Ice Cream Cupcakes

Yield: 2 dozen

Ingredients

  • 1 8.5 oz. Pillsbury Funfetti® Bold Cake Mixes
  • 1/2 gallon of ice cream of choice
  • Whipped Cream
  • Funfetti Sprinkles

Instructions

  • Make cake mix according to directions on package.
  • Line cupcake pan with liners.
  • Place 2 teaspoons batter into bottom of each cupcake.
  • Bake for 5 minutes or until toothpick comes out clean.
  • Cool.
  • Fill each with ice cream of choice
  • Top with whipped cream and sprinkles.
