Mud Hen Bars are gooey, chewy and delicious cookie bar base topped with chocolate, marshmallow and a brown sugar meringue!
I have no idea why they are called Mud Hen Bars, but they are delicious. It is the perfect combination of chocolate and marshmallow.
My favorite part of this bar cookie is the meringue like topping. It is made by whipping egg whites and folding in brown sugar and then spreading it over the top of the marshmallows and chocolate chips. This creates a delicious crunchy topping as it bakes.
Ingredients Needed
- All Purpose Flour
- Sugar, granulated sugar and brown sugar
- Butter, salted
- Eggs
- Baking powder
- Salt
- Chocolate Chips
- Mini Marshmallows
How to Make Mud Hen Bars
- Cream the butter and sugar in the bowl of a stand mixer with the paddle attachment.
- Beat in the whole egg and 2 egg yolks
- Sift flour; baking powder and salt together in another bowl and then combine the two mixtures, blend thoroughly.
- Spread cookie dough in lightly greased 9 x 13 pan.
- Sprinkle cookie crust with chocolate chips chips and marshmallows.
- Beat 2 egg whites until stiff peaks form and fold in brown sugar.
- Spread over top of cookie base.
- Bake 30-40 minutes at 350 degrees
- Cool and cut into bars

Can I add nuts?
If you are fan of nuts in your baked goods, you can sprinkle a cup of chopped nuts on top of the cookie base along with the chocolate chips and marshmallows. You could also chop up the nuts and include them in with the cookie base if you prefer.
How long will Mud Hen Bars last?
These bars are the best the day they are made and are amazing warm, fresh out of the oven. They are good the next day but by far the best the day they are made. Because of the meringue top they do not freeze well or travel well.

- 1 1/2 cups flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1/2 cup chocolate chips
- 1 cup mini marshmallows
- 1 cup brown sugar packed
Instructions
- Cream the butter and sugar
- Beat in the whole egg and 2 egg yolks

Hey, I used to make bars like this quite often when I was a teenager! My friends and I loved them! I haven’t made them in so long, I should try again.
My recipe was called “Sea Foam Chews” if I remember correctly…I always thought the meringue/brown sugar combo on top was pretty cool. I’ll have to go dig up my old recipe and see how it differs from yours…they look basically the same to me!
