		<description>My family loves strawberry cupcakes- pink frosting and all. Here is a great recipe from my Mom&#039;s 1963 copy of McCall&#039;s Cook Book. It is actually a muffin topped with cream cheese frosting (tinged pink with a few drops of red food coloring).
2 c. sifted all purpose flour
1/4 c. sugar
3 t. baking powder
1/2 t. salt
1 t. grated lemon peel
1 c. milk
1/3 c. melted butter/shortening
1 egg, slightly beaten
strawberry jam (1 t. per muffin)- home made is the best!

Sift together dry ingredients. Mix in lemon peel. Separately mix wet ingredients in a small bowl. Make well in center of dry ingredients and pour in milk mixture all at once. Stir quickly with a fork until dry ingredients are moist. Do not beat. batter will be lumpy.
Place 1T. batter into ea. greased muffin pan cup. Add 1 T. strawberry jam and top with additional batter to make 2/3 full cup. Bake in 400 degree oven for 20-25 mins. Frost with cream cheese frosting:
4 oz. butter, softened
4 oz. cream cheese, softened
2 c. powder sugar
1 t. vanille extract
 1-2 drops red food coloring 

Mix well until smooth.
