Chili Rubbed Flank Steak with Roasted Corn Salsa is the perfect, easy summer time meal.It’s been a little quiet here on the blog this week because of the holiday and the fact that all my kids have been in town and I’ve been soaking in every minute of it. We were even in the 4th of July parade in Manzanita, Oregon and won second place!

I try to use my oven as little as possible and the grill is the perfect way to do that. I go between our Traeger and our gas grill. I love them both. For this flank steak I used the gas grill.
Flank steak is one of our favorite cuts of meat to grill. Whenever my kids are home, flank steak is always on the menu. One of our all time favorite flank steak recipes is Fast Fire Flank Steak which is marinated and we had it this week at the beach.
Today’s recipe has a spicy dry rub on it which gives the dish a nice little kick and is another great easy way to prepare flank steak. Rub the meat with a mixture of brown sugar, chipotle chile powder, smoked paprika, salt, pepper, cayenne pepper, garlic powder, dry mustard and cumin. Add a little olive oil to help the rub adhere to the meat. Then just grill the meat to your desired doneness. We like our meat medium.
This meat is delicious just as it is when it comes off the grill but if it is summertime and you are lucky enough to have an abundance of cherry tomatoes in the garden and some fresh corn on the cob, topping it with a roasted corn salsa takes it over the top.
I just grilled the corn and then cut the kernels off the cob. Add in some red onion, cherry tomatoes, cilantro, lime juice and salt and pepper. Then pile it on top! Yes, pile it! You are going to want lots of it.
The salsa is also delicious served with some tortilla chips too.
This is a perfect summer meal in my book – doesn’t heat up the kitchen and uses fresh, in season ingredients. Hope you love it too!
Chili Rubbed Flank Steak with Roasted Corn Salsa
- 1.5 lbs flank steak
- 2 Tbsp dark brown sugar
- 1 Tbsp chipotle chile powder
- 1 Tbsp smoked paprika
- 2 tsp sea salt
- 1 tsp freshly ground black pepper
- 1 tsp cayenne pepper
- 1 tsp garlic powder
- 1 tsp dry mustard
- 1 tsp cumin
- 2 Tbsp olive oil
- 2 Tbsp olive oil
- 3 ears corn shucked
- 1/2 cup red onion finely chopped
- 2 cups cherry tomatoes halved
- 1/2 cup fresh cilantro chopped
- 1/4 cup lime juice
- salt and pepper to taste
- Mix together rub ingredients except for oil.
- Coat meat with rub on both sides. Pat into meat.
- Drizzle with 2 Tbsp to help rub stick.
- Grill meat to esired doneness.
- Let rest 10 minutes and slice across the grain
- Can be made a day ahead of time
- Coat corn with oil and grill until char marks appear on corn.
- Cut corn off of cob.
- Mix together all ingredients and salt and pepper to taste.
