Walks on the Beach

In 2003 a dream came true.  We were able to purchase a second home along the Oregon Coast.  If you’d like to read more about that story you can do so here. Every summer since then we have spent a Week at the Beach.  It is my favorite week of the entire year. One week where our whole family escapes from our “regular” lives and spends 24/7 together.  For me, it is a little piece of heaven. There is a certain sense of peace that comes over me each time [Continue Reading…]

Chocolate Peanut Butter Bars

Chocolate Peanut Butter Bars – about the best flavor combination ever invented.  Don’t you agree!? Today’s recipe for Chocolate Peanut Butter Bars is compliments of Emily.  Technically Emily is my niece in law (my husband’s brother’s daughter in law) but Emily is more like a sister to me some days and other days she has to listen to my motherly advice and she is more like a daughter.  But whatever she is, she is wonderful and amazing and I love her.  She allows me to stay at her house whenever [Continue Reading…]

Jif Giveaway{now closed}

As I am still in recovery and catch up mode here at home after our Week at the Beach (photos and details coming soon) I thought I’d start the week out with a Jif Giveaway.  Who doesn’t love a giveaway and especially one for something delicious!!?? I think one of the best flavor combinations ever invented may just be peanut butter and chocolate.  Well, Jif has put a new twist on that combination and joined together chocolate and hazelnut is some fun new products.  You may have already seen these [Continue Reading…]

Mexican Cole Slaw

Mexican Cole Slaw

I have recently discovered the wonders and beauty of cole slaw. In fact, not only have I learned to enjoy it as a salad/side dish but I have also discovered the yumminess of topping my burger or pulled pork sandwich with cole slaw. I love the crisp texture of the cabbage and I also love how relatively easy it is to put together.  It especially makes a nice addition to a Mexican themed dinner when you add a little kick to it. This Mexican Cole Slaw also fits the pretty [Continue Reading…]

Raspberry Streusel Bars

Raspberry Streusel Bars

We are in the midst of berry season here in Oregon and I am a happy woman. I am lucky enough to have several U-pick berry farms within a few miles of my home and I’ve been spending some serious time there lately. Strawberries, raspberries, marionberries, boysenberries and next week I’ll be picking blueberries. Pretty lucky aren’t I?! Thanks to those berry farms these Raspberry Streusel Bars made an appearance at my house last week. It was my baby’s 19th birthday and I wanted to send some treats with her [Continue Reading…]

Brisket Tacos with Mango BBQ Sauce in the Crock Pot

Brisket Tacos with Mango BBQ Sauce

I think I have finally embraced my crock pot. I am not sure why it has taken me so long.   I keep thinking about all the years I have missed out on of enjoying the ease of having dinner cooking first thing in the morning and not having to stress mid afternoon about what I’m going to fix!  I may be slow but I eventually get there! Today’s recipe for Brisket Tacos with Mango BBQ Sauce in the Crock Pot uses one of my favorite cuts of meat.  I love [Continue Reading…]

Lemon Blueberry Marble Cake

Lemon Blueberry Marble Cake

MUST. MAKE. This was the body of the email my friend Sherra sent me with a link to the recipe I am sharing with you today. The recipe was for a Lemon Blueberry Marble Cake. We celebrated my mom’s birthday this last weekend so I thought that was the perfect opportunity to give it a try.  I love baking cakes.  Cakes like this one take a little time and effort and I really enjoy that process and time in the kitchen.  This is not a “quick I need a dessert” [Continue Reading…]

Caramelized Walnut and Pear Salad

Caramelized Walnut and Pear Salad

This Caramelized Walnut and Pear Salad is a copycat recipe from Nordstrom’s Cafe.  I like any excuse to shop and have lunch at Nordstroms!  I particularly like their tomato basil soup from Nordstroms Cafe but they also have amazing salads.  They are all yummy and I always have a hard time choosing.  I decided I needed to learn to make some of them at home.  One of my favorite salads is a Caramelized Walnut and Pear Salad.  I think the real Nordstrom version uses Blue Cheese but since I am [Continue Reading…]
