Nutty Brown Rice

Brown RIce

Because I am basically a non-potato eater, we eat a lot of rice at our house.  In the last few years I have developed a love for brown rice.  I love the nutty flavor, the crunchy texture and the fact that it is healthier for you than regular white rice.  Brown rice also has a lower glycemic value which is a good thing. Brown rice  is not processed as much therefore preserving more of the nutritional value. The only downside to brown rice is that it takes longer to cook [Continue Reading…]

Broccoli Salad

Broccoli Salad

It is finally feeling like summer around our house.  Let’s hope it lasts. I don’t know about you but I always feel like eating a little healthier in the summer.  Maybe it is all those fresh fruits and vegetables at the farmer’s Market? So in honor of summer finally arriving in Portland this week is going to be dedicated to healthy recipes (or at least as healthy as I get).  In other words, there will be no cookie or cupcake recipes this week!! I think a pretty standard recipe in [Continue Reading…]

Gluten Free Recipe Contest

gluten free

As many of you know, who have been following my blog, we have been dealing with a lot of food issues with my daughter Cali.  She is now on a pretty strict diet of no wheat, no sugar, no dairy, no red meat, no yeast and a few other things.  It does make cooking challenging but I have discovered that there are a lot of amazing options out there for people on special diets. Recently Betty Crocker has come out with a whole new line of gluten free products that [Continue Reading…]

A Thought}Feels Good

stuff done

Well, I have survived my first 3 days of being an empty nester and I think I did pretty good.  In fact today’s thought was my theme song for the last three days! It’s amazing what you can do when you are the only one home!!

Kid’s Cooking Classes

I am excited to announce that I will be holding some kid’s cooking classes this August!  Just when that summer fun may be waning a bit and the kids are a little bored you can send them to my house! Now that my nest is empty I need to fill it up with other people’s children! I have four fun classes to offer.  Each class is 2 hours long and they will leave with a box of homemade goodies made with their own two little hands as well as a [Continue Reading…]

Graduation Gifts and Announcements

My baby girl is now safely delivered to college.  I still can’t believe it.  I woke up this morning to a quiet and empty house.  I have a lot of thoughts to share on that but they will have to wait until another day when I can sort them all out. High School graduation is now only a memory at our house but I have one more post to share with you about it -our graduation announcement and a few of the gifts I put together for my daughter to [Continue Reading…]

Compost Cookies

Compost Cookies

I think this is the last recipe I have to share from both our graduation parties – our Sail Away graduation party and the Smart Cookie party. Today’s recipe is from the Smart Cookie party. When I asked several people what their favorite cookie was from the Milk & Cookie Bar this cookie ended up in everyone’s Top Three – the Compost Cookie. Yes, it has a funny name and no, it doesn’t really have compost in it (several people asked!)  The cookie originated from the Momofuku Milk Bar in [Continue Reading…]

College Apartment Organization

I have been in Utah the last four days getting my daughters settled in their college apartment.  They will be living together this summer and then in the Fall Tessa will move into the dorms. I have forgotten how small those college apartments are, especially the closets.  Let’s just say my girls have a LOT of stuff.  They blame me. We have spent a lot of time trying to organize and squeeze everything into their small space and made a lot of trips to Wal-Mart and Target in the last [Continue Reading…]

Peanut Butter – Chocolate Twist Cupcakes

Sail Away Graduation Party

Today’s recipe is the final cupcake from our cupcake bar at our recent graduation party. I have to be honest though.  I didn’t eat one.  They disappeared too fast.  So I guess that is a good sign. I did try the frosting though and let’s just say the cupcake is worth eating, if only for the frosting. My friend Lizzy who helped me frost all the cupcakes gave me a lesson in how to swirl two different frostings together. She made up a big batch of cream cheese frosting and [Continue Reading…]
